Las Moritas was the first of many prosperous farm plots obtained by the Higinio family. Gifted as seeds to Don Higinio by his father, red and yellow Bourbon, Pacamara, Pache, and many more unique varietals were successfully grown. Las Moritas is shaded by ingas, pine, and avocado trees and relies on reservoirs to nurture the coffee plants. This coffee is harvested between the months of November and April. After the harvest, the coffee is processed by removing the organic matter of the cherry before being washed and dried on large patio beds. Located in Sierra de Las Minas, a region that represents some of the best qualities of Guatemalan coffee, Las Moritas is sweet, pleasantly acidic, and nutty. Sierra de Las Minas is one of the largest mountain ranges located in Guatemala, is home to the largest cloud forest, and is known for its jade deposits scattered throughout. Over the years, our relationship with Don Higinio and his family has grown and several of their harvests have been featured in our signature blends and single origin offerings.
